This fall we created a film to showcase the award winning Herons Restaurant located inside the renowned Umstead Hotel and Spa. This film highlights the unique relationship between, the head Chef Steven Devereaux Greene and local farmer Maggie Lawrence, as they collaborate to infuse the flavors of local produce into the upscale dining experience at the Herons restaurant. On an early summer morning, we met Maggie and Steven at the local farm that Maggie maintains. It was amazing to see the care and effort that Maggie puts into the farm and curating amazing local produce. Steven and Maggie collaborate on menu creation and Steven often uses the farm as inspiration for locally infused dishes to be served at Herons. After seeing the beginning stages at the farm, we headed to Herons, to get a behind the scenes look at how Chef Greene, prepares some of his signature dishes. He was a wealth of knowledge and it was incredible to see him create each dish.
Herons is the signature restaurant of The Umstead Hotel and Spa, open for breakfast, lunch, dinner and weekend brunch. The intimate 98-seat dining room features a full-view kitchen, original artwork and floor-to-ceiling windows with views.

The Umstead is pleased to offer homegrown vegetables and herbs from our nearby dedicated farm. Herons has been recognized by Food & Wine, Condé Nast Traveler, and Southern Living, in addition to receiving numerous accolades and awards including Five Stars from Forbes Travel Guide and Five Diamonds from AAA.
